We believe that excellent, restaurant standard, cuisine is an integral part of our holiday experience and naturally we set our standards high. You will find that a passion for both French, British and Global cuisine is reflected in our tasty menus with total emphasis placed on using only the freshest and whenever possible local ingredients.

Ice and Orange Chamonix Cuisine

Career to date:

Started his formal cooking career at the well renowned Italian / Mediterranean restaurant Pinocchio's in Norfolk under John Marshall-Nichols. Highly influenced by this stage as he found that a great spectrum of flavours can be achieved by using honest, fresh & simplistic ingredients.

Shiki Japanese restaurant was his next move and here learnt a new level of skill in the kitchen and experience and gained a completely different culinary discipline.

After this moved to central London and gained a position as Chef de Partie at the OXO tower restaurant on the bank of the Thames under head chef Jeremy Bloor. Preparing classical French and European dishes with a contemporary element.

Simon's food philosophy:

"It's all about flavours that combine and work well. OXO opened up the possibility to use new ingredients and methods to create great dishes. Simplicity is key.

Home cooking is a great backbone to my cuisine, but I love to take this further and explore; utilising influences from travels in Europe & further a field.

I look forward to preparing great classic cakes, tarts and a selection of mouth watering canapés for tea after you return from a days skiing.

My supper menus will combine comfort flavours, with a crisp clean style. Variation spanning seafood, game and classical meat dishes. Vegetarians are certainly not an afterthought and are an integral part of my menu planning.

Deserts are the lasting impression of any dining experience and at Chalet Tissieres you can expect a great range spanning from English style puddings, French classics to some more bold creations."

Winter:

Breakfast

Whether you have a strenuous or more relaxed mountain day planned, we understand that the right breakfast is key to getting you off to a great start. With this in mind our breakfasts offer a variety of European flavours, including fresh fruit, yoghurt, croissants, pain au chocolat and fresh warm bread with cheeses, meats and cereals of your choice. In addition we also serve breakfast items such as pancakes, eggs & porridge on various days throughout the week.

Afternoon Tea

You will be welcomed back from the mountain to the warm atmosphere of the chalet, with some hot drinks, along with some freshly baked cakes and canapés.

Dinner

Dinner is the highlight of the evening, key to this is setting the right atmosphere. With the fire going and the candles glowing, relaxing music in the background and everyone with rosy cheeks fresh from their alpine day, dinner is served.

Summer:

With more physical and robust days normally on the cards here in Chamonix in the summer our breakfasts and evening home cooked meals reflect this. With a fresh and fantastic menu lasagne, risottos and freshly bake pies always make regular appearances.

If you require more bespoke evening dining this can always be arranged and fantastic BBQ's in our alpine garden in front of the glacier is always a favourite.
